The king of Friulian cheeses, its flavour tells of an old, unspoiled land. Tosoni’s Montasio is made at the meeting place of three splendid Friulian valleys: Val d’Arzino, Val Cosa and Val Tramontina. The Tosoni family collect the finest milk at the Travesio Dairy, in the province of Pordenone, in order to convey the richness of the unspoiled land in the flavours of its Montasio. Attentive ageing, from 0 to 2 years or more, is Tosoni’s hallmark for this exceptionally high-quality product. The flavour, appearance, colour and consistency of Tosoni’s Montasio vary according to how long it is aged. The fresh version is soft with a delicate flavour and white paste and rind. The longer it is aged, the stronger the flavour, the yellower the colour, and the firmer the paste and rind. It is a cheese suitable for eating throughout the meal. We suggest serving it with pears (but don’t tell the farmer).
